I love this time of year!
The heat of North Carolina humid summers hasn't quite settled in and like today, it's kind of breezy with a little nip in the air 1st thing in the morning. Just enough to breathe in and wake you up.
Strawberry season is here and I stopped at one of my favorite farms and picked up a tray the other day. Yes I'll admit I used to love the day my mother set aside to go strawberry picking with our best friends every year but those days of squatting and bending over are gone!😂 So YES, I buy the fresh picked trays now and I am not ashammed. Plus hey, if I can save me some time, I'm all for it. I'm sure, I will take my grandson one day but today is not the day.
I wanted to try something a little different with the Strawberries and WOW what a treat!
They were a hit and yes I'll be doing them again this week so we have plenty in the freezer to be able to pull out for that quick fix in the heat of the summer instead of those frozen suger coma pops! (you know which ones I'm talking about)
I'd say you can do this with any berry but tis the strawberry season so that's what I went with.
I do have blueberries, blackberries, and peaches growing so I'm sure I'll try some of those later.
STRAWBERRY POPS RECIPE
2 lbs of strawberries
1 handful of fresh sweet mint from your garden or potted plant
1/3 cup of fresh local honey
2 cups of plain greek yogurt
Mix and pour into silicone popcicle trays and freeze.
Enjoy!
